  • 1 ripe avocado
  • 1 ripe banana
  • 2 inch slice creamed coconut, cut into small pieces
  • 2- 3 tablespoon coconut nectar
  • ½ cup fresh mint leaves
  • Juice of a half lime
  • 1 teaspoon Matcha powder
  • ¼ cup cacao nibs
  • 3 tablespoon coconut butter, melted
  • ¼ cup cacao butter, melted
  • 1 teaspoon Matcha powder
  1. Place all ingredients (except cacao nibs) into a food processor fitted with the S blade and process until you have a dough with the same texture as raw bliss balls. Add cacao nibs and pulse to combine.
  2. Remove dough from processor and roll it into a slightly flat, long log. Freeze until firm and then cut up into bars.
  3. In a bowl gently melt coconut butter and cacao butter, add 1 teaspoon of Mactha powder (sweetener if desired) and whisk together well.
  4. Remove bars from freezer and dip each twice to create a nice thick coating. Dust with Matcha powder. Place in the fridge to firm. Enjoy!
