  • 1 cup flax seeds
  • 2 cup almonds, soaked and dehydrated
  • zest of one large unwaxed orange
  • and juice from half an orange
  • 2 tbsp coconut nectar
  • 1 cup chocolate chips, vegan
  • zest of one large unwaxed orange
  1. In a food processor, blend the almonds (1 cup) and flax seeds until fine. Add the remaining almonds and pulse until coarsely chopped.
  2. Add the orange juice, zest, and coconut nectar to a food processor and pulse a few times until it comes together.
  3. Remove from food processor and shape into long roll, flatten the roll until about ¾" thick. Cut the log into ½" to ¾" slices and place slices on dehydrator sheet. Dehydrate at 115°F for 6- 7 hours.
  4. Dip the bottom of each biscotti into the melted chocolate and smooth with an offset spatula, and sprinkle a little orange zest. Place the dipped biscotti (flat side down) on a sheet of parchment paper until chocolate sets, about 20 minutes. Enjoy!
