  • 1 cup hazelnut made into butter
  • ½ cup cashew
  • 1 cup soft dates
  • ⅓ cup nut milk
  • 2 tbsp cacao powder
  • seeds of ½ vanilla bean
  • ½ cup chopped hazelnut
  1. In a food processor (or high powered blender) grind the hazelnuts until they form a nut butter. It will take 5- 10 mins depending on the strength of your processor (scraping the sides occasionally). Add remaining ingredients (except ½ cup chopped hazelnuts) and process together until well combined. Add the chopped hazelnuts and dough to the mixing bowl and use the spatula to thoroughly combine. Press the dough into a parchment paper lined 15x15cm square pan. Place in the freezer to set (about 2 hours). Remove from freezer, spread melted chocolate over cooled bars and freeze until set, about 20 minutes. Remove from pan, turn upside down and spread melted chocolate. Place back in freezer for another 20 minutes. Cut them as large or small as you want, dust with cocoa powder. Store in the refrigerator. Enjoy!
