Ingredients
  • CHOCOLATE PUDDING:
  • 1 cup nut milk
  • ½ ripe banana
  • 3 tbsp raw cacao powder
  • ¼ cup + 1 tbsp buckwheat groats, soaked
  • BEETROOT & RASPBERRY JAM:
  • ½ cup frozen raspberries
  • ½ cup beetroot, peeled and chopped
  • ¼ avocado
  • 2 soft dates
  • ¼ cup nut milk
  • 2 tbsp chia seeds
  • TOPPINGS:
  • spiralized beetroot, you can also grate the beet
  • handful of fresh raspberries
  • vegan chocolate shavings
Instructions
  1. FOR CHOCOLATE PUDDING - Whiz it in a blender until smooth. I think adding a heaping spoonful of nut butter or tahini at this point would be a brilliant idea.
  2. FOR BEETROOT & RASPBERRY JAM - Add all the ingredients (except chia) to the blender and blend until smooth. Add chia seeds and blend until just combined and still a little chunky.
