  • 1+ ½ cup chopped beets, peeled
  • 1 cup raisins, soaked
  • ¼ cup goji berries, soaked
  • ½ cup buckwheat flour
  • ⅓ cup oat flour
  • *1 tbsp coarsely ground goji berries
  • *2 tbsp raw or vegan chocolate, melted
  1. Add all the ingredients into a food processor and process until it is a pretty smooth dough. Place mixture in a fridge for about 20 minutes.
  2. Roll into balls and enjoy as a bliss balls or shape them into cookies and dehydrate for extra chewiness.
  3. Remove mixture from food processor and form into a loaf. Roll flat with a rolling pin. Then use cookie cutters to create the desired shapes.
  4. Place cookies on a dehydrator sheet, and dehydrate at 140°F about 2 hours. Flip and remove dehydrator sheet. Decrease heat to 115°F and continue to dehydrate about 2 - 3 hours or until dry on the outside and soft on the inside.
  5. Drizzle with melted chocolate and sprinkle with coarsely ground goji berries. Store in the fridge in an airtight container on a sheet of baking paper. Enjoy!
