  • 2 cup almond meal
  • 1 cup flax seeds, made into fine flour
  • 1 cup zucchini, peeled
  • ½ cup raisins or date paste
  • ½ cup cacao or carob powder
  • 1 heaped tbsp coconut oil
  • 1 cup pecan nuts
  • ⅓ cup goji berry
  • ⅓ cup pistachio
  • ¼ cup buckwheat
  • ¼ cup banana chips
  • zest of one orange
  • 2 tbsp bee pollen
  1. Combine all the ingredients (almond meal, flax seeds, zucchini, raisins or date paste, cacao or carob powder, coconut oil) in the food processor fitted with the S blade and process until well combined (stick together).
  2. Add remaining ingredients and pulse a few times. Remove dough from processor, place on a sheet of parchment paper and form into a log. Press firmly so that everything sticks together. Let sit in the freezer to firm for about 2 hours.
  3. Take out of the freezer and roll in finely shredded coconut. For the best result, place in the fridge and allow it to sit for a couple of hours or overnight so all the yummy flavors will combine. Transfer to an airtight container and store in the fridge. Enjoy!
