Baked Apples Stuffed with Fruit Mince

  • For the Fruit mince:
  • 2 apple, cubed
  • 1 orange, peeled
  • ⅓ cup dried prunes
  • ⅓ cup dried raisins
  • ¼ cup dried cranberries, optional
  • 1 tsp cinnamon
  • Ingredients for Crumble:
  • *4 heaped tbsp from the fruit mince above
  • juice of ½ orange
  • ½ cup gluten-free rolled oats
  • 1 tbsp crushed walnuts
  1. Pick a nice, crisp apple ( about 6 ) that's sweet, but not too sweet. Slice off the tops, then scoop out the core (this is a little tricky but doable. I used a very sharp paring knife and a melon-baller. It doesn't have to look perfect ) and stuff the insides with a mix of orange, apple, prunes, raisins, cranberry, cinnamon … fruit mince.
  2. For filling - Place all ingredients into a high speed blender and blend until smooth. Pour into a large bowl, next add in ¼ cup raisins and stir well. Take out about 4 heaped tbsp from the mixture and set aside*
  3. For crumble - Place all the ingredients in a bowl and stir until well combined. Spoon top of your apples, sprinkle with crushed walnuts.
  4. Warm in the dehydrator at 140 °F for 2 hours. Enjoy!
