  • 1 cup macadamia nuts
  • 2 cup shredded coconut
  • ½ cup pandan juice (recipe above)
  • 2 tbsp coconut oil
  • seeds of 1 vanilla bean
  1. Add all the ingredients into a food processor and process until it is a pretty smooth dough. Place mixture in a fridge for about 10 minutes. Roll into balls or shape them into cookies and sprinkle with shredded coconut. Store in the fridge in an airtight container on a sheet of baking paper. Enjoy!
