Fragrant Goji Berry Bliss Balls

  • 2 cup shredded coconut
  • 3 heaped tbsp full fat organic coconut milk, chilled*
  • 3 heaped tbsp coconut oil, at room temperature
  • juice and zest of ½ lemon
  • 1 tsp of your preferred sweetener to taste
  • ¼ cup Goji berry
  1. Combine all the ingredients (shredded coconut, coconut milk, coconut oil, lemon, sweetener) in the food processor and process until well combined.
  2. Remove blade, add goji berries and mix together with your hands. Let sit in the fridge for about 10 minutes. Roll into balls. Refrigerate or freeze depending on what texture you like.
*Note: chill your coconut milk in the refrigerator overnight, being sure not to shake or tip the can to encourage separation of the cream and liquid, flip it upside down and open the can
