There’s something so comforting about apple desserts in the fall. Those fragrant spices and sweet tartness of the apples it’s perfect. To make this Apple Cake, I modified my Fruit Mince Pie, and Apple Pie recipe for the filling. What makes this cake so special? It’s perfectly moist, soft cake layers with those sweet autumn spices. Apple cake is like the ultimate fall cake. It combines cinnamon, nutmeg, cloves, coriander seed, and ginger. You can add all spice, cardamom or whatever else you like….
Autumn
Golden Chai Pumpkin Cake

Oh, hello Fall, it’s that time of year again … Pumpkin Spice Season! More than any other time of the year, autumn/winter is about flavors and lots of them. The season is full of my favorite sweet treat flavors, including cinnamon, cloves, ginger, cardamom, chai … apples, and pumpkin. And what better way to celebrate the warm spice flavors of fall than by making your favorite fall desserts.
…Fig Lavender Cake
Fresh figs are wonderful! They’re such a cozy beautiful, late summer/early fall fruit. Although dried figs are available throughout the year, there is nothing like the unique taste and texture of fresh figs. They’re soft, crunchy, lusciously sweet, and lavender is my favorite herb! I combined them together with blueberries and black currants in this cake. It turned out so delicious. Simple, but oh-so-perfect!…

Over the past weeks I’ve made a Pumpkin Tim Tams, Pumpkin & Chocolate Macaroons and many pumpkin spice lattes. For today’s pumpkin indulgence, I wanted to try something I haven’t made before. It is as good as I dreamed! I knew it would be. Because honestly, what could be better than pumpkin, dates, pumpkin spice and creamy coconut milk? Everything is good with pumpkin spice. Absolutely everything! Dreams do come true!…

Apple Breakfast Cookies
They’re incredibly delicious and filled with all sorts of whole food, no added sugar, no artificial ingredients, just pure plant based nutrient powered goodness to get your morning started. Packed with whole grains, healthy fats and protein, these chewy apple breakfast cookies are perfect for a snack, dessert or lunch box treat. Don’t be surprised by how quickly these go!
These oatmeal cookies are a great way to not only sneak in both soluble and insoluble fiber into your diet. Oats provide plenty of fiber, notably beta-glucan, a soluble fiber that has been shown to reduce overall cholesterol, decrease the risk of heart disease, and aid in proper digestion. Raisins are another source of fiber, while walnuts boost the beneficial healthy fats in these cookies. The bananas hold the cookies together to create the perfect texture, while cinnamon and orange juice gives a heavenly flavor, and raisins and bananas adds in the slightest hint of sweetness. I love adding dried fruits into cookies/cakes because they’re a great way to naturally sweeten any recipe without adding heaps of extra sugar, especially refined sugar….
