These Linzer cookies make a delicious and beautiful addition to a Holiday cookie tray. They are very easy to make and require only a few ingredients and a Linzer cookie cutter. They have a spiced linzer base, filled with delicious homemade raw jam that’s flavored with ginger, cloves and cinnamon. The spices really up the flavor of the jam filling and make these cookies a special treat that’s perfect for the Holidays.

- For the Linzer Cookies
- 1 cup almond meal
- ½ cup coconut flour
- ½ cup buckwheat, sprouted and dehydrated*
- 1 teaspoon orange zest
- ½ teaspoon cinnamon powder
- ¼ teaspoon ginger powder
- ¼ teaspoon star anise powder
- 1 teaspoon vanilla bean paste
- ⅛ teaspoon pink himalayan salt
- 3 tablespoon coconut nectar
- ¼ cup filtered water
- 1 tablespoon psyllium husk
- For the Cranberry Jam
- 2 cup fresh cranberries
- 1 large red apple, diced
- ¼ cup freshly squeezed orange juice
- ¼ cup coconut nectar
- ½ teaspoon cinnamon powder
- ¼ teaspoon ginger powder
- ¼ teaspoon ground cloves
- For the Linzer Cookies - Add the sprouted and dehydrated buckwheat* to a high-powered blender. Process until a fine flour forms. This can take a minute or two.
- Add all the linzer cookie ingredients to a food processor and process to combine.
- For the Cranberry Jam - Place into a high-speed blender all the jam ingredients and blend until smooth.
- Transfer the mixture into a large rectangular dish and dehydrate 2 hours at 140°F.
- Decrease heat to 115°F and continue to dehydrate about 8 hours. Stir the jam often to avoid getting a skin on top. You want it reduced by half in volume.
- Assemble the Cookies - Transfer the dough to a piece of parchment paper and roll it into (between two sheets of parchment paper) a rectangle that’s about ⅛” to ¼” inch thick. Cut all the cookies with a cookie cutter.
- Then with half of the cookies, spread 2 teaspoon jam on each. Set a cut-out cookie** on top of each, pressing the two together so they make a sandwich. Repeat with remaining cookies.
- Place them on dehydrator tray and dehydrate at 115°F for 2 hours or until they have reached the firmness you desire.
** If you like the look of the powdered “sugar” on top, be sure to sprinkle it on the cut out cookie before you assemble the cookies for a clean look. I used powdered xylitol.
You can use any cut out shape, but hearts are my favorite.
You can use any jam you like in Linzer cookies, they would be delicious with any fruity flavors.
