A classic holiday flavor combo in one delicious cake! This White Chocolate Peppermint Cake combines rich velvety white chocolate cream with a hint of peppermint and a dark chocolate base. A beautiful, festive dessert for the holidays!
I love the flavors of chocolate and peppermint together and this cake does it just so wonderfully. If you love peppermint cake you need to try this! Surprise your friends and family with this simple and delicious Holiday Peppermint Cake! It just may become a holiday tradition!
For the chocolate layer, I adapted my favorite White Chocolate Cake recipe to include peppermint tea. In the original recipe, you pour in one cup of orange juice. You can totally use peppermint extract and nut milk for this part too – I actually ended up using some peppermint tea made from fresh peppermint.
As usual ➛ no-bake, raw, vegan, dairy free, gluten free, refined sugar free and 100% delicious. I really hope you enjoy making this recipe.
- For the crust
- 1 cup pecans, soaked and dehydrated
- ½ cup desiccated coconut
- 12 fresh peppermint leaves
- ¼ cup cacao powder
- 3 tablespoon coconut nectar
- 2 tablespoon coconut oil
- ⅛ teaspoon pink himalayan salt
- For the white chocolate layer
- 1+1/2 cup cashew, soaked 6 hours
- 100 gram vegan white chocolate, melted
- 3 tablespoon coconut oil, melted
- 3 tablespoon coconut nectar
- 1 cup peppermint tea
- ⅛ teaspoon pink himalayan salt
- For the crust - Add the base ingredients to a food processor and process until it resembles fine crumbs and sticks together when pressed. Press into the base of lined 5 inch deep round cake pan and place in the freezer.
- For the white chocolate layer - Add all the ingredients to a high-speed blender and blend until smooth and silky. Pour the cream over the base. Pop in freezer at least 6 hours to set (overnight is ideal). Leave to thaw before serving. Store in the refrigerator or freezer. Enjoy!
