Super easy festive Rocky Road Fudge is stuffed with a colorful party of dried fruits, seeds and crunchy nuts. Delicious decadent dessert that’s perfect for Christmas! It also makes a really lovely edible homemade gift.
There’s no dairy, sugar, or fake things in this – just pure whole ingredients and love. This recipe is also a great way to use up bits and pieces of straggling nuts and dried fruit in your pantry.
This irresistible sweet treat is loaded with all kind of good stuff. Deliciously sweet but awesomely healthy. As usual ➵ raw, vegan, dairy free, gluten free, refined sugar free and very yummy. I really hope you enjoy making this recipe.
- For the Base:
- 1 cup rolled oats
- ½ cup shredded coconut
- ½ cup coconut milk powder
- ⅓ cup creamed coconut
- 2 tablespoon coconut oil
- 1+ ½ tablespoon coconut nectar
- ¼ cup nut milk
- Add ins:
- ¼ cup dried cranberries
- ¼ cup goji berries
- ¼ cup dried apricots, chopped
- ¼ cup dried figs, chopped
- ¼ cup sultanas
- ¼ cup banana chips
- ¼ cup pine nuts
- ¼ cup pumpkin seeds
- ¼ cup hazelnuts
- For the Cake top:
- 3 dried figs
- 3 dried apricots
- 1 tablespoon goji berries
- 1 tablespoon sunflower seeds
- some hazelnuts, walnuts and banana chips
- Add rolled oats to food processor and blend into flour, then add in the remaining ingredients (except: dried fruits, nuts, and seeds) and process until well combined. At the end add the dried fruits, nuts and seeds and pulse a few more times until it comes together.
- Spoon mixture into a lined 15x15cm (6x6inch) baking tray then press down with the back of a spoon. Decorate the top with the extra figs, apricots, goji berries, seeds and nuts. Place in the freezer for a few hours (about 2- 3 hours) to set. Enjoy!
