Shamrock Fudge Bars are incredibly simple to make, but super fun and damn good. Raw, vegan, allergy-friendly and full of healthy, real-food deliciousness. Infused with the delicate, yet earthy taste of Matcha with a hint of lime and mint. They’re soft and tender and rich yet far from overwhelming, just like a perfect homemade fudge bars should be and of course, fabulously GREEN 🍀
They are amazing, delicious treats as there are no funny/hidden ingredients inside and it’s like eating something little indulging and healthy at the same time! What are your lucky sweet for 🍀 St. Patrick’s Day?
- 1 ripe avocado
- 1 ripe banana
- 2 inch slice creamed coconut, cut into small pieces
- 2- 3 tablespoon coconut nectar
- ½ cup fresh mint leaves
- Juice of a half lime
- 1 teaspoon Matcha powder
- ¼ cup cacao nibs
- 3 tablespoon coconut butter, melted
- ¼ cup cacao butter, melted
- 1 teaspoon Matcha powder
- Place all ingredients (except cacao nibs) into a food processor fitted with the S blade and process until you have a dough with the same texture as raw bliss balls. Add cacao nibs and pulse to combine.
- Remove dough from processor and roll it into a slightly flat, long log. Freeze until firm and then cut up into bars.
- In a bowl gently melt coconut butter and cacao butter, add 1 teaspoon of Mactha powder (sweetener if desired) and whisk together well.
- Remove bars from freezer and dip each twice to create a nice thick coating. Dust with Matcha powder. Place in the fridge to firm. Enjoy!
