Only five ingredients needed to make this delicious and easy Biscotti. Flavored with orange and dipped in chocolate. You could leave off the chocolate dip, but I wouldn’t recommend taking things that far!
Recipe makes about 8 (gluten-free, raw, vegan, healthy) perfectly crisp and crunchy pieces and it is sooo yummy. They have a delightful crunch, thanks to whole almonds, and a silky, smooth chocolate to sweeten the deal. Enjoy them with a cup of herbal tea. The texture was perfect for not being baked. I used my dehydrator for this recipe, but if you don’t have one don’t worry! You can always use your oven on a low temperature.
- 1 cup flax seeds
- 2 cup almonds, soaked and dehydrated
- zest of one large unwaxed orange
- and juice from half an orange
- 2 tbsp coconut nectar
- 1 cup chocolate chips, vegan
- zest of one large unwaxed orange
- In a food processor, blend the almonds (1 cup) and flax seeds until fine. Add the remaining almonds and pulse until coarsely chopped.
- Add the orange juice, zest, and coconut nectar to a food processor and pulse a few times until it comes together.
- Remove from food processor and shape into long roll, flatten the roll until about ¾" thick. Cut the log into ½" to ¾" slices and place slices on dehydrator sheet. Dehydrate at 115°F for 6- 7 hours.
- Dip the bottom of each biscotti into the melted chocolate and smooth with an offset spatula, and sprinkle a little orange zest. Place the dipped biscotti (flat side down) on a sheet of parchment paper until chocolate sets, about 20 minutes. Enjoy!
