Christmas is getting closer and closer! We all have our favorite holiday recipes, but I know I’m always looking for new ideas. So today I’m going to share with you thhiiiiiisss. Oh, Cake, cake, beautiful cake… Mmmm mm, get in my belly. Ok, I just can’t focus… I’m going to get a slice of cake now, in fact;)
I used this Chocolate Fairy Cake recipe (I shared last year) for the chocolate part as the starting point. I loved how light and so full of rich chocolate flavor. This year I wanted to have something with a fruity boost so I pair it with a creamy persimmon – orange layer. I had this idea to create another Christmasy scene and I thought it would be so cute to decorate with adorable chocolate snowman, gingerbread men… Nice and easy – just melt, stir, chill and all done! All surrounded by little bliss balls, gingerbread stars and blueberries for a little extra fun. They’re fast, easy, and most importantly, deliciously cute! However, it may take a bit of extra time to make but, it is well worth. Change your cake game with a very little extra effort to take it to the next festive level.
- Chocolate layer
- Dry ingredients
- ¾ cup oat flour
- ⅓ cup buckwheat flour
- 1 c shredded coconut
- 2 tbsp carob powder
- Wet ingredients
- 12 figs
- 1 ripe banana
- 2 heaping tbsp coconut oil
- ¼ cup + 1 tbsp nut milk
- Persimmon layer
- 2 ripe persimmon, peeled
- 1 orange, peeled
- 1 tbsp coconut nectar
- 1 cup finely shredded coconut
- Combine all the wet ingredients (except banana) in a food processor. Pulse a few times just to break them up. The ingredients should all have broken down into crumb-sized pieces. Add the banana (make sure to use super ripe banana) and pulse together. Add dry ingredients into a food processor and process until mixture is like a sticky dough. Remove from food processor and press the mixture into a 6" cake tin lined with baking paper. Place in the freezer.
- Put everything (except shredded coconut) in the high-speed blender and blend until smooth. Add the shredded coconut and pulse together. Pour the cream over the base and place in the freezer for a few hours (about 4 hours) to set. Decorate as your heart desires. Enjoy!
