These are gluten, nut and oil-free, raw, vegan (they are also very healthy and so darn easy to make) with just a bit of an earthy flavor from the beet, but truly delicious! I’m literally obsessed with them at the moment. Full of delicious, nourishing and wholesome ingredients. This recipe using leftover pulp from juicing – Bonus!! These delicious balls are perfect for a little afternoon treat! Everywhere you see raw, vegan, no bake bliss balls they all look yummy! I have a few bliss ball recipes here on my blog but wanted to try a different flavors and ingredients, so this beetroot and blackberry was born! And those of you who are familiar with my blog already know I have a slight love affair with beets.
Ingredients
1 cup shredded coconut
1/2 cup oats
1 cup blackberries
1/2 cup beetroot juice pulp
3 tbsp coconut nectar
2 tbsp orange juice
1/3 cup chia seeds
Method
Just add all the ingredients into a food processor and process until well combined.
Wet your hands a little bit and roll spoonful of the dough into little balls.
Roll with topping of your choice, I used 1/2 cup finely shredded coconut mixed with ½ tsp beetroot powder + ½ tsp turmeric powder. Enjoy!
Note
Substitute juice pulp for fresh beet if you’d prefer.
