I created these yummy raw, vegan Peppermint Patties to keep in a freezer whenever I feel like treating myself.ย A smooth, refreshing minty filling surrounded in rich dark chocolate…ย yummmm
While most peppermint patties are made with peppermint oil, I thought Iโd switch it up a bit this time and throw in some fresh mint and matcha powder. To give the patties a fancy look, I drizzled them with melted chocolate (matcha powder + cacao butter + coconut oil). The end result was unreal! It just doesnโt get any better ๐ฟ Guaranteed to melt in your mouth!
I enjoyed making them because they are different and unique. Not to mention, they are so fresh and cool. You must try this healthy peppermint patty recipe Iโm sharing with you today. They are super quick and easy to make, clean alternatives (and by the way also raw, vegan!) to your commercially bought mint patties. I promise you will never buy store bought Peppermint Patties again!
Here’s a recipe for delicious success: Homemade Peppermint Patties
- 1 cup shredded coconut
- 1 tsp matcha powder
- 2 tbsp + 1 tsp coconut oil, melted
- ยผ cup fresh mint leaves
- 2 tbsp nut milk
- few drops stevia
- To make these, just place all the ingredients in a food processor and process until well combined. Place this mixture in the freezer for 10- 15 minutes to allow it to slightly harden.
- Once the mixture is firm enough to handle, remove from freezer and place the mixture between two pieces of parchment paper and roll until the thickness of 1 cm. Use cookie cutters to get the desired shape. Place them on a parchment paper and place back in the freezer for 15- 20 minutes to allow them to firm up once more.
- After these babies firm enough, dip them in melted chocolate and allow to set. Enjoy!
