Green! Green everywhere! St. Patrick’s Day being around the corner and I am always amazed by the wonderful green treats I see all over the blogosphere around this time. Today, I have rounded up some of my favorite green treats to share with all of you. Celebrate the luck of the Irish with super healthy treats featuring the holiday’s signature color – GREEN! No need to break out the green food coloring this Saint Patrick’s Day. Mother nature has you well-covered with these naturally green recipes. Well, let’s get started…
Swirly Pops
Ingredients:
½ cup shredded coconut
1 cup oat flour
½ cup nut milk
1 tbsp coconut oil, melted
1 tbsp coconut nectar
1 inch slice creamed coconut
seeds of 1 vanilla bean
juice of ¼ lime
1 tsp matcha powder
Place all ingredients into a food processor and process until the mixture form a sticky ball. Place a large sheet of non-stick baking paper on a flat surface. Remove mixture from food processor and place on a sheet of baking paper. Form into a dough, by using the knife cut into 6 equal portions then form into a long snake. Coil the snake in itself (dust with matcha powder if sticky). Start from one end and roll into a coil. Insert lollipop stick where outer strip ends and set aside on wax paper to set. Enjoy!

St. Patrick’s Day Smoothie
Ingredients:
2 handfuls of kale
1/4 cucumber, peeled
1/2 inch ginger, peeled
1/2 inch turmeric, peeled
1 tsp wheatgrass powder
1 tbsp hulled hemp seeds
1 stalk lemongrass
1 cup coconut water
Blend all ingredients together until smooth.
1 + 1/2 cup fresh mixed berries
handful alfalfa sprouts
