Hooray, it’s a Friday! So let’s start the weekend celebration with some chocolate;)
I’m in love with this chocolate pudding, actually it’s one of my favorite desserts, especially if I add lots of fresh raspberries and beetroot on top;) basically, it’s something that I’m crazy addicted to. If you’re a chocoholic like me, you can add some chocolate shavings too. Healthy, super easy and it tastes like heaven! Perfect chocolate pudding made only with healthy, wholesome ingredients. It’s like all my chocolaty dreams came true the minute my taste buds sampled this pudding. Absolutely hearty, healthy, and satisfying. I love it.
If you love beets I am sure you will totally love this dessert. I kept things really simple, because I feel that all dessert should be pretty simple. Hehehe, but it does not happen every time. But this one is for sure. This chocolaty treat would make a perfect afternoon pick me up. You only need a handful of ingredients to make this silky, smooth and creamy dessert. It takes minutes to whiz it in a blender (another bonus!), then add your favorite toppings (nuts, seeds, fruit… etc.) and that’s all! It sounds amazing, right? It indeed is.
I’m having a little beetroot obsession at the moment, I’m pretty much a beetroot addict – absolutely love them. I think what I love most about beets is that it is so incredibly easy to take this simple root vegetable and elevate into something insanely delicious. I love beets for their earthy sweetness, vibrant color, and versatility.
Ingredients for Chocolate Pudding:
1 cup nut milk
½ ripe banana
3 tbsp raw cacao powder
¼ cup + 1 tbsp buckwheat groats, soaked (optional)
Whiz it in a blender until smooth and try not to eat it all straight away 🙂 I think adding a heaping spoonful of nut butter or tahini at this point would be a brilliant idea.
Ingredients for Beetroot & Raspberry Jam:
½ cup frozen raspberries
½ cup beetroot, peeled and chopped
¼ avocado
2 soft dates
¼ cup nut milk
2 tbsp chia seeds
Add all the ingredients (except chia) to the blender and blend until smooth. Add chia seeds and blend until just combined and still a little chunky.
Toppings:
spiralized beetroot, you can also grate the beet
handful of fresh raspberries
vegan chocolate shavings
