I realized this morning that I haven’t had Matcha in a while. So started making a sweet treat for breakfast. I’ve done apricot and chocolate rolls before but here is my absolute new favorite Matcha roll recipe – seriously good, and call this the simplest ever because it has like 7 simple ingredients. The base made it just with gluten-free rolled oats (they’re a good source of fiber, trace minerals and even plant-based protein), almond meal, hazelnut, dates, fresh lemon juice.
For this particular one, the flavor is Japanese green tea aka Matcha powder. The roll was really delicious with a little crunch, also includes amazing deep Matcha flavor. The filling is really simple, whole goji berries sweetened with date puree. Topped with an extra sprinkling of Matcha on top for a well-needed kick – you can’t go wrong with that. Each bite is a little bit of heaven. Mmm it’s like a fiesta in your mouth. Matcha is really one of my favorite superfood. The flavor not only is it super refreshing, but it comes loaded with health benefits, and the vibrant green color really cheers me up. I already have a list of recipes to develop using Matcha (things like biscuits, doughnuts, and bread rolls) so keep your eyes open for them!
Recipe for Matcha Rolls
Ingredients for roll:
½ cup rolled oats, ground into flour
1 cup almond meal
1 cup hazelnut, activated
Place all ingredients into a food processor and process into meal consistency.
1 cup soft dates, soaked
2 tsp matcha powder
1 tsp lemon juice
Add remaining ingredients and process until the mixture form a sticky ball. Place a large sheet of non-stick baking paper on a flat surface. Remove mixture from food processor and place on a sheet of baking paper. Form into a dough, then roll dough between 2 sheets of baking paper by using a rolling pin to roll both length ways and sideways. The dough should be approx. 11 by 7 inch rectangle.
Ingredients for filling:
1/3 cup soft dates
1/8 cup filtered water
Put everything in the blender and blend until smooth.
1 cup goji berry
Remove from blender and place in a medium sized bowl. Add in goji berries and stir to mix well. Remove the baking paper and place the filling on half of the rectangle and fold over to seal it. Press the log firmly. Once rolled, cut into one and a half inch slices. Enjoy!
Every single bite literally melts into your mouth. If your mouth is watering now … Oh well, I guess that’s another excuse to make this sweet goodness for breakfast.
