Hello lovely people! Today I made (in fact I made them again today) these soft, bite sized persimmon balls and I must say they didn’t last long. No panicking, I only showed half of the amount … Ok, Ok!! If you following my site you probably know me well enough and you know what to expect from me;) I’ve already munched my way through half of these. Can’t help myself, I’m obsessed with persimmons at the moment. When you think of persimmon, you probably start daydreaming of delicious smoothies, nicecreams, cakes and other desserts. This lovely quick (bliss balls are probably one of the easiest treats) and tasty dessert I discovered one night when craving a bunch of different flavors. I’m so excited to show you another healthy xmas treat! In this recipe I used fresh and dried persimmons, dates, rolled oats, shredded coconut, almond meal and finished with a touch of orange, ginger and turmeric and if this wasn’t enough I also went for cinnamon and flax meal for rolling to make them look good!
Ingredients:
1 ripe persimmon, peeled
juice of 1/4 – 1/2 orange
zest of 1 orange
6 soft dates
1 tsp cinnamon
1/4 tsp ginger powder
1/4 tsp turmeric powder
1 cup shredded coconut
1 cup rolled oats, gluten-free
1/3 cup almond meal
1 handful dried persimmon, if you can’t find dried persimmons, substitute with whatever dried fruits you prefer
*1/4 tsp cinnamon + 1/4 cup flax meal to roll
Place all ingredients (except dried persimmon) into a food processor fitted with the S blade and process until ingredients form a sticky ball. If mixture is too moist, add more shredded coconut. Add the handful dried persimmons and pulse a few times. Pour into a bowl and place into the freezer about 20 minutes. Remove from freezer and form mixture into about 20 small balls, then coat each one in the mixture of cinnamon and flax meal. Transfer to an airtight container lined with a sheet of baking paper and store chilled.
