Hello everyone, hope you all had a good day! How to enjoy a day off? Relax, sleep, read, go out in nature and/or have a lazy day … well, I just made this Chocolate Salami … Ekkkk, I love day off! Then I realize the name of this recipe may sound alarming but have no fear, this is not salami at all (this sweet does not contain any meat)!! Just a chocolate log that looks like salami, in fact it’s actually full of nuts, dried fruits, chocolate and zucchini;) More than just cute. This lovely treat is fully raw, vegan, sweet but not too sweet, made completely with unprocessed and gluten-free ingredients, beyond full of nutrient rich plant based goodness! This recipe is one of those easy, quick no bake recipes, literally takes less than 10 minutes to make. Fun and super easy to make, festive and so delicious. It also makes a fantastic edible Christmas gift. Ummm YUM, it’s so dam good if you ask me!
This recipe is based on a classic Christmas treat that’s popular throughout Europe.
Ready for a little fun? Let’s make Chocolate Salami!
Ingredients:
2 cup almond meal
1 cup flax seeds, made into fine flour
1 cup zucchini, peeled
1/2 cup raisins or date paste
1/2 cup cacao or carob powder
1 heaped tbsp coconut oil
Combine all the ingredients in the food processor fitted with the S blade and process until well combined (stick together).
1 cup pecan nuts
1/3 cup goji berry
1/3 cup pistachio
1/4 cup buckwheat
1/4 cup banana chips
zest of one orange
2 tbsp bee pollen
Add remaining ingredients and pulse a few times. Remove dough from processor, place on a sheet of parchment paper and form into a log. Press firmly so that everything sticks together. Let sit in the freezer to firm for about 2 hours. Take out of the freezer and roll in finely shredded coconut. For the best result, place in the fridge and allow it to sit for a couple of hours or overnight so all the yummy flavors will combine. Transfer to an airtight container and store in the fridge. Enjoy!

Notes: You can easily modify this recipe to suit your tastes by use any nuts, seeds, chocolate chips, dried fruits, spices of your choice, orange/lemon/lime zest, or whatever extract you’ve got on hand.

Edible, maybe … but not always amazing. I’ve made plenty of failures I suppose it’s a self-learning process. I actually learned how not to make or how to fix it 😉
