I’m super excited about this recipe, I couldn’t wait to share this gem with you all.
This creamy smoothie is so easy to make, ready in just 15 minutes and you probably have all the ingredients in your house already. It uses pumpkin, carrot, orange, goji berries and pumpkin seed milk. This smoothie is out of this world YUMMY! Oh YES! You’ll love this! This smoothie may look like candy corn (but actually doesn’t taste like candy corn) it’s much better and healthier, full of vitamin packed ingredients for a healthy and festive alternative to Halloween junk!
Ingredients, Yellow Layer:
1 cup pumpkin milk*
1 cup chopped carrots
1/2 cup chopped pumpkin
4 soft dates
Chop carrots and pumpkin into chunks. Blend together the ingredients for the yellow layer until completely pureed. Pour evenly into the two glasses and place into a fridge. While the yellow layer is chilling, blend the ingredient for the orange layer.
Ingredients, Orange Layer:
1 large orange, peeled
1/3 cup goji berries
4 soft dates
1/3 cup pumpkin milk
Blend until smooth and slowly pour half of the orange layer over the yellow layer in glasses, dividing evenly. Return glasses to fridge.
Ingredients, White Layer:
1 cup coconut milk, homemade preferred
1/2 cup shredded coconut
Blend all the ingredients together until smooth. Top the orange layer with the coconut milk and shredded coconut mixture. Garnish with goji berries. Serve or keep in the fridge until serving time. There you have it!

3 cup filtered water
1/2 tbsp chia seeds
seeds of ½ vanilla bean
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp ginger powder
sweetener to taste
Method:
Place all the ingredients in the Vitamix or other high speed blender and start blending at low speed to increase to high speed until smooth (all of the seeds are completely pulverized). Strain the milk with a nut milk bag. Store in the fridge.
Recipe for Pumpkin seed Milk
Ingredients:
