Yesterday’s experiment Raw Goji Cookies what’s not to love!!? On Sunday, I was in the mood for something sweet and chocolatey, but without any guilt attached!
I love these raw treats that are so easy to prepare and absolutely delicious! They make such a simple snack, full of goodness (using healthy and wholesome ingredients) and so easy to whizz up in a food processor, then pop them into the freezer to set.
Recipe: In a food processor mix 3/4 cup raisins (soaked), 1 cup dried figs, 3 heaped tbsp tahini (or any type of nut butter) and process until ingredients form a sticky ball (add 1- 2 tbsp water if desired). Add in 1/4 cup hulled hemp seeds, 2 tbsp cacao powder, 1/3 c shredded coconut and 1 cup cashew and process until well combined. For next add in 1/3 c goji berries and pulse a few times. Pour the mixture in a small bowl and place in a freezer for about 30 minutes. Remove from freezer and form mixture into a roll. Cut into cookies and Enjoy!
Dates can be used in place of the raisins and other nuts work well.
