We’re hit by the crappy weather over the weekend (it was cold, gray, windy, rainy- well hello my beloved migraine) and I need it something to cheer me up. I’d decided to make some macadamia and coconut cookies. I wanted them to taste something, though … so I was looking around to find something to flavor the cookies. And I found a bag of frozen panadan leaves – Hooray! I love pandan!
The pandan flavoring gives it a nice fragrance and slightly sweetness with a kind of nutty flavor. Perfectly tasty. To prepare the pandan juice just wash and cut 4 pandan leaves into 2-3 inch pieces, put them into a blender with 1/2 cup filtered or coconut water and blend until smooth. Use a strainer to collect the juice.
These cookies were ultra easy to make you just mix everything together and voila!
Pandan Cookies
this recipe makes 14 bite sized cookies
Ingredients:
1 cup macadamia nuts
2 cup shredded coconut
1/2 cup pandan juice (recipe above)
2 tbsp coconut oil
seeds of 1 vanilla bean
add all the ingredients into a food processor and process until it is a pretty smooth dough. Place mixture in a fridge for about 10 minutes. Roll into balls or shape them into cookies and sprinkle with shredded coconut. Store in the fridge in an airtight container on a sheet of baking paper. Enjoy!
