Golden milk ice cream sandwich – inspired by one of my favorite hot drinks
Base: turmeric, ginger,almond, coconut
Cream: banana, orange and coconut milk
I don’t know about you but I personally adore everything with chocolate in it. Yum!
Recipe for Ice Cream Sandwich
Ingredients fro base:
1 + 1/2 cup shredded coconut
1 cup almond meal
2 heaped tbsp coconut oil
2 tbsp coconut nectar
1/2 tsp turmeric powder
1/2 tsp ginger powder
Place all ingredients into a food processor fitted with the S blade and process until well combined ( stick together ). Press mixture into a loaf tin/container.
Ingredients for ice cream:
1 orange, peeled
Place orange segments into a food processor fitted with the S blade and process until smooth, add in
3 frozen banana
1 can full fat organic coconut milk, chilled
and process until reaches a smooth ice cream looking ( occasionally keep stopping it and scraping down the sides of the food processor to get the right consistency ). Spread the cream over the base and let sit in the freezer ( about 4 hours ) or until it’s set. Store in the freezer (these need to be served chilled though). Take out freezer 10 minutes before you want to serve it so it can soften.
Cut into bars or squares and keep it in the freezer until ready to eat;)
Can be coated with melted vegan dark chocolate or raw chocolate made with cacao, coconut oil or cacao butter and coconut nectar. Happy Friday all!!
Notes: I highly recommend cutting it up into slices the first time you take it out so that you can put individual pieces back into the freezer and take out one piece at the time instead of defrosting the whole “cake”. I like separate them with parchment paper so they don’t stick together in the freezer.
