I don’t know about you, but I absolutely love apple pie and this is a healthier version of the classic baked apple pie. Last year I made an old-fashioned fruit mince pie which totally blew my mind. Oh yeah, and this is happening again. Ready, Yes/No? Okay, so I suggest you to sit down and take a deep breath. This maybe the most delicious thing that ever come out of my kitchen. Just imagine a soft and sweet crust (figs, raisins, mulberries and walnut) filled with orange juice, vanilla and cinnamon coated apples, topped with walnuts and redcurrants … all these deliciousness come into a perfectly flavorful and healthy raw creation. Highly addictive!
and the pie is done! I couldn’t be happier with the result.
Raw Vegan Apple Pie
You’ll need: food processor
Preparation time: 30 minutes
Ingredients for crust:
1 cup raisins
7 whole dried figs
1/4 cup dried mulberries
juice of 1 small orange
Combine all the ingredients in the food processor fitted with the S blade and process until smooth.
Take out 1 heaped tbsp from the mixture and set aside*
add 1 cup walnut and pulse together until from a dough that holds together.
Press mixture into a pie tin. Refrigerate the crust while making the filling.
Ingredients for syrup:
juice of 1 small orange
*1 heaped tbsp from the mixture
seeds of 1 vanilla bean
1/2 tsp cinnamon
In a bowl combine all ingredients and whisk together until smooth.
Ingredients for filling:
5 – 6 apple
and the syrup above
Cut apples into thin slices and place into a large bowl. Pour the syrup over the apples and toss gently to mix.
Remove cake from refrigerator and fill with the syrup coated apples. Dash with ground walnuts and decorate with redcurrants. Serve & Enjoy!
Store in the fridge.
