Super easy recipe:
Makes 15
2 cup shredded coconut
3 heaped tbsp full fat organic coconut milk, chilled*
3 heaped tbsp coconut oil, at room temperature
juice and zest of 1/2 lemon
1 tsp of your preferred sweetener to taste
Combine all the ingredients in the food processor and process until well combined.
1/4 cup Goji berry
Remove blade, add goji berries and mix together with your hands. Let sit in the fridge for about 10 minutes. Roll into balls. Refrigerate or freeze depending on what texture you like.
*Note: chill your coconut milk in the refrigerator overnight, being sure not to shake or tip the can to encourage separation of the cream and liquid, flip it upside down and open the can

Barberries? I had never heard of them before, so I went onto the google searches and yeah, they pretty much do look like Goji berries 🙂 but they’re different things.
